As most of my readers know, I made some big lifestyle changes that have resulted in my losing 155 lbs. over the course of the last 3+ years. Last year I crept up and down over the course of the year (between 250-265 through the year), but I'm now down to 240 and losing again. One of the goals that I have is to write a book about my self-induced transformation, and part of that will be recipes for healthier living. My challenge has been cooking for one. I'm just not that adept at it. Well, at least to start. I'm beginning to experiment a bit and I wanted to report on the success I just had.
I just made the most incredible bbq-chicken/cheese roll-up. And it only took me about 10 min. in the kitchen. Fast food at home! After watching Food Network all the time, I realized how much I really do know already about cooking, and I have learned a ton of new things as well.
Some of the key principles of my new lifestyle are to avoid processed foods and to eat fresh as much as possible. I'm also learning a lot about making homemade sauces of all kind, from BBQ to dressings to spaghetti sauce.
As Sunday dinners progress, I'm going to be introducing more and more new recipes that are made totally from scratch. Right now, it's just casual, and I'm still relying on my old, "semi-homemade" style. But for the book, I want to go back to scratch.
Speaking of Sunday dinner - tomorrow is Mexican. I have a feeling since people were "frozen out" of going to Nashville, I might pick up a few more guests... Just leave me a comment or give me a call so I have a semi-accurate headcount.
